Despite being aged for an average of 8 years, this is a pale and bright Fino. But its age is apparent in the depth of flavour and complexity. Bottled ‘En Rama’ with only the lightest of filtration and no other treatment, to retain maximum character.
Intense on the nose, with strong mineral notes alongside herbs, almonds and the warm doughy smells of the bakery. Soft and rounded on the palate. None of the sharp edges of some Finos - all nicely smoothed off. Refreshing yet complex.
Bottled twice per year in spring and autumn. This is from the Spring 2017 bottling.
